One of my favourite soups to have is pumpkin soup! It's healthy, delicious and warms the soul in winter. There are lots of different ways of cooking but below is a simple quick recipe for those cold days and nights.
Cooking time: approx. 40-60min
Ingredients:
1 leek (white part)
1 brown onion
1/2 kent pumpkin (or butternut pumpkin)
500mL vegetable stock
A little cooking cream
Olive oil
Salt
Method:
Prepare your ingredients by cleaning all the vegetables and roughly chopping the white part of the leek, brown onion and pumpkin.
In a pot, on low heat to medium heat, fry the chopped leek and brown onions with a bit of olive oil, until brown and caramelised (15 - 20 min). For maximum flavour, cook on low heat for about 30-40 min but it's still ok to have the heat a little higher if you don't have the time.
Then add the chopped pumpkins and fry for 5 min.
Then add vegetable stock and turn heat up high and bring to boil. Boil until pumpkin is soft when you poke it with a fork.
Once pumpkin is soft, get a handheld blender and blend until no lumps in the soup.
Then finally add a bit of cream and cumin.
Viola!!!
You have a beautifully spiced pumpkin soup. This can be served with some toast or toasted sourdough.
